Crescentine and Tigelle
- Crescentine
Emilian crescentine, also known as "gnocco fritto" in some areas, are a culinary symbol of Bologna and its surrounding areas. This speciality is made with a simple dough of flour, water, and yeast, which is rolled out into small pieces of dough and then fried in hot lard until puffed and golden. Crescentine are traditionally served hot, accompanied by a variety of cured meats such as ham, mortadella, and pancetta, as well as local cheeses like Parmigiano Reggiano. - tigelle
Made with a dough of flour, water, yeast, and a pinch of salt, these small round flatbreads are cooked on special moulds called "tigelliere". Once ready, tigelle are sliced in half and filled with delicious local cured meats, fresh cheeses, or the traditional Modenese pesto made with lard, rosemary, and garlic. Perfect for a casual lunch or flavourful dinner, tigelle are a testament to the rich gastronomic heritage of Emilia-Romagna and continue to delight the palates of all who taste them.
